Protein pancakes  Keto/LCHF



This is one of my absolute favourite recipes. I have experimented with it through the years and now it's ready, I think :) It's a low carb, keto recipe without wheat flour. Instead I use pea protein powder. The pancakes in the photos had pea protein powder with 40% protein but now I have pea protein powder with 80% protein and only 3 procent carbs! You can make it in the frying pan or in the oven. Enjoy and loose weight!

Protein pancakes LCHF/Keto recipe
Ingredients:
400 ml cream made from cow's milk
2 eggs
4 teaspoons Psyllium Husk powder
100 ml pea protein powder
2 pinches, milliliters salt, ues pure salt without additives/anti caking agent
Rapeseed oil for frying or oil of your choice
Do like this:
Pour the cream in a bowl. Crack the eggs and pour into the cream. Add the salt. ADD the pea protein powder. Add the Psyllium Husk powder. Beat the batter with a whisk. The batter swells after a while, so if you want it a little thicker, like American pancakes, you can wait 5 minutes and let the batter stand and swell. Heat up the stove to medium hot (7 of 10). Pour rapeseed oil in a frying pan, about 2-3 table spoons. Pour the batter in the frying pan in two or in three batches and fry for some minutes until it's golden brown. Flip the pancakes after some minute. Serve with whipped cream and berries, sweetening optional.
If you make the pancakes too big, like filling out the whole frying pan, the pancakes might fall apart when you turn them. Therefore I recommend to pour in the batter in two or three clicks. It you want to make a big full pan pancake, turn down the heat a little to 5 (of 10). Pour in quite much batter and let it fry for quite long time until you flip it.
Don't use plastic cook ware, frying stick.





Vegan pancakes
You can try to make the pancakes vegan using vegan cream alternative and chia seed flour plus water instead of eggs.

Alternate your protein powder
You can alternate your protein powder. For example you can use mung bean protein isolate powder.
or soy protein isolate powder.

Oven pancake



Ingredients:
500 ml cream made from cow's milk
4 eggs
2,5 teaspoons Psyllium Husk powder
150 ml pea protein powder
3 pinches, milliliters salt, ues pure salt without additives/anti caking agent
Rapeseed oil or butter for the gratin form/the baking sheet
Do like this:
Pour the cream in a bowl. Crack the eggs and pour into the cream. Add the salt. ADD the pea protein powder. Add the Psyllium Husk powder. Beat the batter with a whisk. Pour the batter into a gratin form that has been greased with oil or butter. Bake for 14 minutes in 120 degrees celsius. Take out and serve with keto/lCHF jam and whipped cream. You can have diced pork in it if you want or go totally vegan.
You can try to make the pancakes vegan using vegan cream alternative and chia seed flour plus water instead of eggs.
