Husmanskost- Home cooking is what has been eaten in Sweden for a very long time. You eat varied and healthy food and cook food from scratch: meat, poultry, fish, eggs, milk, butter, cream, vegetables, fruit, berries, bread, etc.
The potato can probably be seen as the backbone of the Husmanskost diet. The Husmanskost diet has often been combined with hard physical work, which required a high intake of carbohydrates. You eat a lot of bread, pasta, wheat flour, etc. Combined with movement, exercise or physical work, it is very healthy.

Combine Husmanskost with resistant starch.
This mean that you cook your potato, rice, pasta or pancakes the day before you eat them. Let it cool in the refrigerator over night and eat them 24 hours later. Then the starch in the food has become resistant starch. Resistant starch is an undigestible fiber/carbohydrate that doesn’t raise glucose and thus is beneficial for people with diabetes and helps weight loss. "this type of starch resists digestion in the small intestine. It passes through your body without entering your bloodstream and breaking down into glucose (blood sugar) like other foods." Potato alternatives
If you want to cut down on carbohydrates you can use white radish which has 4,1g carbs per 100g. You can also use cauliflower which has 5% carbs. Perfect for mashed potato substitute.
